Three quarters of a handful of thin spaghetti noodles. Boil H2O with one drop olive oil W/ noodles until done. Strain off H2O. Use cheese cloth. Add three table spoons worth of Oilve oil. Add one chopped garlic clove. Add one table spoon worth of crushed red peppers. Add one full hands (1/2 cup?) worth of Kraft parmesean cheese. Mix and eat. Add a hot cup of tea for a fine evening beverage.

While hiking not many people like to stop and make a lunch. Here is a quick and easy recipe to keep you going!
1 pouch tuna fish (they come in all diff. flavors now) 2-3 small packets of mayo. 1-2 small packets of pickel relish 2-3 small pita pockets salt and pepper to taste
The nice thing about this recipe is you can play with the taste very easily. With no cooking required it is a fast and healthy lunch. Now that the tuna is packed in pouches there is no need for a can opener or to drain the tuna.

I just thought I would post my recipe for a “Just add water” breakfast. After a little experimentation I came up with this combination. In a sandwich or quart sized plastic bag I mix, One cup of my favorite dry cereal. One quarter cup of powdered skim milk. One tablespoon of powdered coffee creamer. At camp I add one cup of cold water to the mix, stir and enjoy. I have eaten it out of the bag for quick cleanups or if I have the time I will mix it up in a bowl and eat out of that. The coffee creamer mixes with the powdered milk and dissolves in the cold water without staying lumpy.

Recipe: Green Beans and Ham

1 Pound of fresh green beans .70 Pound of ham. (Wal-Mart sells ground hamburger and ham that doesn't need refrigerated. Tastes like salted pork.) 2 table spoons of butter.
Boil green beans for 10 minutes, drain the water, add ham and butter.
The meal is quick to make and the salted ham replenishes salt lost on the trail.
This recipe makes 1 serving, but can be adjusted as necessary.

Quaker instant oatmeal is one of the most popular breakfast foods. Just follow the directions on the packet.
TIP: For no dishes, just cut off the top of the bag, pure the hot water right into the bag, stir well, let sit for a bit, and eat right out of the bag.

1/2 cup dried veggies 1/4 to 1/2 cup tempeh (freeze before you go, and it'll be good when you use it) 2 cups water
Combine and boil for about 3 or so minutes.
Add 1 tsp garlic powder, 2 tsp onion powder, and any herbs you'd like.
Thicken with about 1/2 cup Hungry Jack potatoes.
The more potatoes, the thicker it is, the less potatoes, the more soupy. Really thick makes great sandwiches!
Quantities may be adjusted to your taste.

Place in water, bring to a boil, after a minute, cook till mush has thickened.Serve.
I package the dried fruit and nuts with the mush at home, then all I have to do is dump in water at the camp.

I like this for a warm breakast without too much fuss. Use a few tablespoons of bulgar wheat, #2. Add boiling water and leave sit, if its a metal cup rewarm over heat and add enough water to make the consistency you like. Add brown sugar and you have an inexpensive carbo breakfast. Packs very light.

A tasty, highly variable bowl of holiday goodness; so tasty you'll want to eat it frontcountry, too. Especially good for those who prefer to just heat water on the stove. You will need:
approx. 3/4 cup instant potatoes approx. 3/4 cup Stove Top or other 'just add water' dressing dried cranberries and/or cherries (or raisins if you already mined your trail mix of everything else) any meat or soy jerkey (turkey is best, of course) butter if desired powdered gravy mix if desired, or dried boullion
All amounts are approximate. The potatoes and dressing mix can be combined ahead of time in a zip-style bag. In camp, dole out as much as you want for dinner, add dried fruit and jerkey to mix, then add boiling water to rehydrate. If you find it bland, add boullion or gravy mix. Add butter for cold weather. Best with spiced cider mix, or a warm, spicy tea (such as chai) on the side. And of course pumpkin pie for dessert!

A nice warm breakfast if you are as tired of oatmeal as I am. Also good at disguising last night's dinner flavors in the bowl.
approx. 1 cup of Grape Nuts (most granolas work, too) approx. 1/4 cup non-fat dried milk
combine together and place in zip-style bag to pack. In camp, just dump into bowl, add boiling water and let sit about 30 seconds. For more texture and flavor, add a handful of trail mix, mixed nuts, or dried fruit. Or add hot cocoa mix if you are a chocolate addict.

Good for variety on a long trip. You will need to peruse the foreign foods section of the grocery store, or go to Whole Foods or Mustard Seed or a similar place
approx. 1 cup quick-cook rice (minute rice) small packet or can of tuna or shrimp several sheets of nori (green seaweed sushi rollers) wasabi paste or powder (or horseradish in a pinch) packets of soy sauce from the Chinese take-out
put rice in your bowl, add boiling water to cover. Let this sit several minutes while you prepare everything else. Cut the nori into quarters. Open the seafood, prepare the wasabi if necessary and mix with the soy sauce. MAKE SURE YOUR RICE IS SOFT. put a spoonful of rice on a quarter sheet of nori. add some of the seafood. dip in the soy and wasabi, or pour the latter over the former. enjoy. repeat.

1/2 pkg Bertolini spinach and cheese tortelini 1 foil pkg salmon 1/4 - 1/3 c. parmesan cheese seasoned salt garlic olive oil
Cook pasta according to directions, using enough water to cover the pasta about 1-2 inches, aprox 8-10 minutes, drain. In skillet, heat olive oil, salt, garlic to taste with salmon til warmed. Add more olive oil to the pasta along with the salmon mixture. Sprinkle with cheese. Enjoy!
You can easily vary this - add chicken and sundried tomatoes and peppers for a chicken parmesan. Or tuna with cheddar. Vary the type of pasta, the possibilities are endless! The time here is spent only cooking the pasta, and it is really worth it!

1 Cup peanut butter 1 Cup Oats 1 Cup of Honey
Mix together and eat. You can mix dry milk to make the meal less sticky, last time I mixed powered sugar instead of powered milk, and although it didn't help with the stickiness, it did taste good.
The nice thing about this meal is it contains most of the food groups that are important.

2 bagels (kroger Deli has great Everything bagels or the Cheesy ones have great flavor)
1--3oz. foil pack of tuna 3 to 4 packets of tarter sauce(basically mayo&relish) Mix tarter packets inside tuna pack and spread onto 2 bagels.
Garnish with course black pepper and a slice of hard cheese if you like.

The perfect compliment to Thanksgiving in a Bowl, custom engineered by a Food Scientist. Prepare ahead of time in your dehydrator. You will need: 1 can of pumpkin with pie recipe on the label Corn syrup (to replace sugar) Other ingredients as listed, except milk Basically, this is an adaptation of the existing recipe that makes a great fruit roll-up (yes, pumpkin is a fruit). So follow the recipe on the label with these two exceptions: *Replace the sugar at a 1:1 ratio with corn syrup. So if it calls for 1 cup of sugar, use 1 cup of corn syrup *Skip the dairy product. It will shorten shelf life. Mix together all ingredients and spread on the roll-up sheet of your food dehydrator. Dry as you would an applesauce. The pumpkin will remain sticky, but pliable. If you want easily separated pieces, cut the dried circle apart and store between layers of wax paper or plastic wrap.

This is my standard backwoods breakfast. It is quick on the trail and quite filling. Increase proportionately for each day on the trail.
At home, mix: 1-Packet of regular instant oatmeal 1-Packet of flavored oatmeal (Maple & Brown Sugar is good) 1/2-Packet of hot chocolate mix with or without marshmallows 2Tbs. ground almonds or pecans 1/3c. raisins, or dried mixed fruit
Mix it all together and put in a zip-lock bag. On the trail, put it in a cup and add 1c. hot water, enjoy. For variety, use instant Cream of Wheat instead of oatmeal.

Gordons food service (GFS) is a commercial/wholesale store that deals with bulk, food service, caterers, etc. they carry a variety of soups (chicken noodle, potato, broccolli, chili, and others) that can made by the serving in a ziplock freezer bag by simply by adding boiling water and let sit for 10-15 minutes. They are fine out of the package but can also be spruced up a bit by adding some personal odds and ends (beef jerkry, dehydrated hamburger, etc.). It's a quick and easy lunch, or side to a dinner.

BiB (Boil in Bag) Chili
Ingredients:
½ # elbow macaroni 1# ground Chicken or Turkey 1 cup frozen corn 1 can hot chili beans 1 can mild chili beans 1 small can tomato paste 2 cubes Knorr’s beef bullion 1 packet Chili Seasoning Optional: crushed red pepper to taste.
At home:
Cook and dehydrate the macaroni and Chicken. Dehydrate the canned chili beans. DO NOT RINSE! Dehydrate the frozen corn. Dehydrate the tomato paste, creating a leather which can be chopped up inot smaller pieces. Crush the bullion cubes.
Mix all ingredients in a one gallon zip lock freezer bag.
This mix will keep in the freezer for months.
When you are ready to go, stir and measure 1 cup per person into a zip lock freezer bag.
On the trail:
I put the cooking bag into a second zip lock bag. This provides extra insulation and provides some safety if the cooking bag rips.
Add 1 & ¼ cup of boiling water to the bag for each cup of dry chili.
Put the cooking bag in a cozy or wrap in a fleece and let it sit for 30 minutes.
Serve and enjoy!

Recipe: drying your own meats

I hike enough each year to invest a little effort into making my own meals for the trail. Meats can be cured in a way that 2/3 of the weight is gone, nutrition stays in and is incredibly resistant to spoilage, even on hot days. Once I had a cooler accident on a long car trip and the dried chicken got damp. I open the foil and redried it using the defroster as I drove and darned if it didnt work just fine. Meats kept this way are remarkably light and resistant to spoilage.
Air cured sausage
This one is easy, buy several pounds of double smoked sausage. Arrange a cool dry spot, in an attic or basement, to hang the links while drying. Make sure the links stay perfectly seperated so the entire suface is exposed to the air. Leave a piece of newspaper underneath as a target for any fat that might drip and then wait. After a couple of months the sausage will shrink considerably and feel very hard, in fact they will bounce on a table. Warning: Do not try to bite in directly, cut in small pieces or you may loosen a tooth. To eat, slice very thin and chew along with a sip of water. Along with hard cheese and pita, this makes a high calorie high protein meal. I also slice and toss in stews and bean dishes. Store in a container at room temp.
Chicken
Buy large chicken breasts and cook in a crock pot, no seasonings, just some olive oil. When done, cut into strips and lay on a cookie sheet and bake for several hours at 250 F, a nice task for a cold winter day. Drying is done when it turns a golden brown or orange and feels like styrofoam, I pack a few ounces in aluminum foil and toss to wrapped portions into a sea bag. It will keep indefinetely at room temp. To use, simply add to your meal, like Lipton Soup or wherever you would use white meat. You could make it right in gravy and make instant mashed taters and have a great meal.

I like using powdered whole eggs for cooking. They reconstitute exactly like fresh eggs and scramble just fine so you can make trailside egg foo young or just a more interesting breakfast. Even pastries turn out fine. Maybe I will try to conjure up a recipe for fresh baked bread over a campfire. Buy them online, the cost plus shipping is only slighty more than fresh eggs.

Recipe: Apple Fritters

You will need: Muffin mix 'just add water' or 'just add milk' style (I use Martha White mixes because they are cheap at Giant Eagle) Apples Water
Peel and chop apples - smaller pieces are better. Mix together apple pieces and muffin mix - it should look like there are way too many apples with just a little coating of mix. Add water a bit at a time and stir in until the batter is about pancake consistency. Too thick is better than too thin, especially if thes tove isn't resting flat Fire up the stove and put a non-stick pan on it. Drop the apple batter on by the spoonful and cook like pancakes. If it is windy or if the apples aren't cooking through, use a lid.

I needed a low cost solution to dinner on the trail. Since I have lots of time what I found to work is make my own dried meals. This one is split peas, lentils and ham. The ham has been dried according to my tip elsewhere on this page. Ingredients:
dry split peas
dry split lentils, yellow, green French, I buy at a food co-op
curry powder (optional)
dried refried bean flakes, used as thickener, optional
salt and other spices to taste
At home I mix the ingredients in a cooking bag like for turkeys. The oven bags are quite rugged and waterproof. Do not use beans that take overnight soaking, test this recipe at home to make sure you will be satisfied on the trail. To prepare dinner simply add water and bring to a simmer. Keep checking the consistency often, a lot of water is needed and a little extra time compared to instant meals. I plan 5 ounces of dry mix for over a pound of rehyrdated food, try it at home first to get the portions you like. If you overwater, just add more dry mix. If there is some, just before serving I add a few large chunks of cheddar and allow it a minute to soften. Another tip: I will package 5 oz. amounts in smaller bags and keep around ready to pack, they last months without spoiling.

2 cups water 1 apple 2 Tablespoons graham cracker crumbs 2 Tablespoons brown sugar ¼ teaspoon cinnamon 4 graham cracker squares
For backpacking preparation combine graham cracker crumbs, brown sugar, and cinnamon in half size zip-top baggie. Using Jetboil cup boil 2 cups water. Peel, core and slice apple into ¼ inch slices. Add apple slices to boiling water. Boil for 5 minutes (4 minutes for crunchier texture.) Remove apples from water using fork, (no need to drain) and place in bowl.
